- 1 pound lean ground beef (90% or higher)
- 2 cups cooked jasmine rice or brown rice
- 2 cups broccoli florets, bite-sized
- 1 large red bell pepper, sliced thin
- 3 cloves garlic, minced
- 1 tablespoon fresh ginger, grated
- 3 tablespoons soy sauce (or coconut aminos)
- 1 tablespoon sesame oil
- 1 tablespoon honey or maple syrup
- 2 green onions, sliced
- 1 teaspoon sesame seeds for garnish
- 1 tablespoon olive oil
Instructions
- Heat the olive oil in a large skillet over medium-high heat. Add the ground beef and cook until browned, breaking it into small crumbles with a wooden spoon. Drain any excess fat if necessary.
- Push the beef to one side of the pan. Add the minced garlic and grated ginger to the empty space. Cook for about 1 minute until you can smell the wonderful aroma.
- Add the broccoli florets and sliced red bell pepper to the skillet. Stir everything together with the beef.
- In a small jar or bowl, whisk together the soy sauce, sesame oil, and honey. Pour this sauce over the beef and vegetable mixture.
- Continue cooking for 4 to 5 minutes, or until the vegetables are tender-crisp and the sauce has thickened slightly to coat the beef.
- Divide the cooked rice into four bowls. Top each bowl with a generic portion of the beef and vegetable mixture.
- Garnish with sliced green onions and sesame seeds. Serve warm and enjoy the savory flavors.
