  • 1 pound lean ground beef (90% or higher)
  • 2 cups cooked jasmine rice or brown rice
  • 2 cups broccoli florets, bite-sized
  • 1 large red bell pepper, sliced thin
  • 3 cloves garlic, minced
  • 1 tablespoon fresh ginger, grated
  • 3 tablespoons soy sauce (or coconut aminos)
  • 1 tablespoon sesame oil
  • 1 tablespoon honey or maple syrup
  • 2 green onions, sliced
  • 1 teaspoon sesame seeds for garnish
  • 1 tablespoon olive oil

Instructions

  1. Heat the olive oil in a large skillet over medium-high heat. Add the ground beef and cook until browned, breaking it into small crumbles with a wooden spoon. Drain any excess fat if necessary.
  2. Push the beef to one side of the pan. Add the minced garlic and grated ginger to the empty space. Cook for about 1 minute until you can smell the wonderful aroma.
  3. Add the broccoli florets and sliced red bell pepper to the skillet. Stir everything together with the beef.
  4. In a small jar or bowl, whisk together the soy sauce, sesame oil, and honey. Pour this sauce over the beef and vegetable mixture.
  5. Continue cooking for 4 to 5 minutes, or until the vegetables are tender-crisp and the sauce has thickened slightly to coat the beef.
  6. Divide the cooked rice into four bowls. Top each bowl with a generic portion of the beef and vegetable mixture.
  7. Garnish with sliced green onions and sesame seeds. Serve warm and enjoy the savory flavors.
