- 1 cup butter, softened
- 1 cup sugar
- 4 large eggs
- 1 cup mixed dried fruits
- 1 cup raisins
- 1/2 cup nuts, chopped
- 1 teaspoon baking powder
- 1 teaspoon ground cinnamon
- 1/2 teaspoon ground nutmeg
- 1 teaspoon vanilla extract
- 1/4 cup milk
Instructions
- Preheat your oven to 350°F (175°C). Grease and flour a baking pan.
- In a large bowl, cream together the butter and sugar until light and fluffy.
- Add the eggs one at a time, beating well after each addition.
- Stir in the vanilla extract.
- In another bowl, combine the flour, baking powder, cinnamon, and nutmeg. Gradually add this to the butter mixture, alternating with the milk.
- Fold in the dried fruits and nuts.
- Pour the batter into the prepared pan and bake for about 40-50 minutes, or until a toothpick inserted in the center comes out clean.
- Allow to cool before serving.
Notes
For best results, let the cake sit for a day or two before serving to develop flavors. Can be frozen for up to 3 months.
