Ingredients

  • 2 cups all-purpose flour
  • 1 cup butter, softened
  • 1 cup sugar
  • 4 large eggs
  • 1 cup mixed dried fruits
  • 1 cup raisins
  • 1/2 cup nuts, chopped
  • 1 teaspoon baking powder
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1 teaspoon vanilla extract
  • 1/4 cup milk

Instructions

  1. Preheat your oven to 350°F (175°C). Grease and flour a baking pan.
  2. In a large bowl, cream together the butter and sugar until light and fluffy.
  3. Add the eggs one at a time, beating well after each addition.
  4. Stir in the vanilla extract.
  5. In another bowl, combine the flour, baking powder, cinnamon, and nutmeg. Gradually add this to the butter mixture, alternating with the milk.
  6. Fold in the dried fruits and nuts.
  7. Pour the batter into the prepared pan and bake for about 40-50 minutes, or until a toothpick inserted in the center comes out clean.
  8. Allow to cool before serving.

Notes

For best results, let the cake sit for a day or two before serving to develop flavors. Can be frozen for up to 3 months.
