Christmas Cookies with Royal Icing

Ingredients

  • 2 3/4 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1 cup unsalted butter, softened
  • 1 1/2 cups white sugar
  • 1 egg
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon almond extract
  • 3 cups powdered sugar
  • 2 egg whites
  • 1 teaspoon lemon juice
  • Food coloring (optional)

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a bowl, mix the flour, baking soda, and baking powder together.
  3. In another bowl, cream together the softened butter and white sugar until smooth and fluffy.
  4. Beat in the egg, vanilla extract, and almond extract until well combined.
  5. Gradually blend the dry ingredient mixture into the wet ingredients until a dough forms.
  6. Roll rounded teaspoonfuls of dough into balls and place them onto ungreased baking pans.
  7. Flatten each ball lightly with a glass, and sprinkle colored sugar on top if desired.
  8. Bake for 8 to 10 minutes until the edges are lightly golden.
  9. For the royal icing, beat the egg whites together with lemon juice, then gradually add the powdered sugar until stiff peaks form.
  10. Let the cookies cool completely, then decorate them with royal icing as desired.

Notes

Store cookies in an airtight container for up to a week. Undecorated cookies can be frozen for up to three months.
