- 2 3/4 cups all-purpose flour
- 1 teaspoon baking soda
- 1/2 teaspoon baking powder
- 1 cup unsalted butter, softened
- 1 1/2 cups white sugar
- 1 egg
- 1 teaspoon vanilla extract
- 1/2 teaspoon almond extract
- 3 cups powdered sugar
- 2 egg whites
- 1 teaspoon lemon juice
- Food coloring (optional)
Instructions
- Preheat your oven to 375°F (190°C).
- In a bowl, mix the flour, baking soda, and baking powder together.
- In another bowl, cream together the softened butter and white sugar until smooth and fluffy.
- Beat in the egg, vanilla extract, and almond extract until well combined.
- Gradually blend the dry ingredient mixture into the wet ingredients until a dough forms.
- Roll rounded teaspoonfuls of dough into balls and place them onto ungreased baking pans.
- Flatten each ball lightly with a glass, and sprinkle colored sugar on top if desired.
- Bake for 8 to 10 minutes until the edges are lightly golden.
- For the royal icing, beat the egg whites together with lemon juice, then gradually add the powdered sugar until stiff peaks form.
- Let the cookies cool completely, then decorate them with royal icing as desired.
Notes
Store cookies in an airtight container for up to a week. Undecorated cookies can be frozen for up to three months.
